Ingredients

  1. 5 cupsall-purpose flour (about 625 grams)
  2. 1/2 cupcombined clarified butter and puff pastry butter (about 120 milliliters)
  3. water and orange blossom water
  4. Filling:
  5. Roasted and ground peanuts (or any type of nuts)
  6. Sugar
  7. Almond extract
  8. 1light splash of orange blossom water

Steps

    Combine the flour and clarified butter in a bowl. Rub the butter into the flour until well mixed.

  2. 2

    Add orange blossom water and enough water to bring the dough together. Knead lightly, then divide the dough into 6 balls. Let them rest for at least 1 hour.

  3. 3

    Roll each dough ball out slightly with a rolling pin. Stack them on top of each other, sprinkling cornstarch between each layer.

  4. 4

    Next, roll each piece through a pasta machine, starting at setting 1, then 3, then 6. After the final setting, fold the dough in half. Sprinkle cornstarch between each step.

    Stack the rolled pieces together. You should have 12 layers after folding each piece in half after setting 6.

    Divide the dough in half. Grease a baking pan well with clarified butter, then place the first layer of dough in the pan. Add the nut filling, then cover with the second layer of dough. Brush generously with clarified butter, cut into your desired shapes, decorate as you like, and bake in the oven.
