Boil Spinach leaves in water for 2-3 minutes

Strain water from boiled spinach

In a kadhai, add 2 tsp oil and add capsicum, peas and carrot. Saute for 5 minutes on low flame

Once the vegetable cool down, transfer stir fry veggies with boiled spinach to blender

To that add mint leaves and coriander leaves

Blend it to a coarse paste

Transfer the paste into mixing bowl and to that add boiled potatoes, chilli powder, dry mango powder, salt, garam masala, Turmeric powder, coriander powder, green chilli

To that add 2 tsp bread crumbs and 1 tsp cornflour

Add cottage cheese to that and mix well so that all spices are combined with vegetables

Make small patties from the dough

Cover the patties with bread crumbs to make kabab crispy

Similarly prepare all the patties and cover with bread crumbs

Heat the pan with oil for deep frying the patties

Fry on medium flame from both sides

Kababs are ready to serve with Coriander Mint chutney.. ENJOY!!
