Rub salt on fish fillets, set aside for 5 minutes, rinse, pat dry, and dust in flour, just so flour lightly coats the fish.

Place a large pan on medium heat, add half the butter, once butter has melted, place fish fillets and let it cook through about 4 minutes, (try not to over crowd the pan), you can cook fish on oneside in batches too. once cooked on one side turn, add garlic, let it cook for a minute, add capers and wine, when the wine, begins to bubble, add the remain butter, turn heat off and let it rest for 5 minutes before serving.

Serve with sour dough or any crusty bread of your choice! Enjoy!
