This is super easy and delicious: cook the beans, cook the chorizo, and mix them together until the mixture is fairly dry.

Spread the bean and chorizo mixture on a tortilla, fold it, and fry in a little bit of oil—just enough to crisp up the tortilla. Don’t submerge the whole taco in oil, or the beans will soak it up and lose their flavor. The goal is just to crisp the tortilla.

Once the taco or quesadilla is golden, place it on a paper towel to remove excess oil. Put it on a plate, add crema, cheese, and green salsa in whatever amounts you like, and enjoy!
