Prawn Fritter / Hae Pia

Prawn fritter or hae pia is our favourite deep fried snack, we have it either for lunch or tea time. This fritter is very nice to be served when it is still piping hot, dip it in hot chili sauce.
It is very easy to make and takes only a few basic ingredients. I have made it many times and definitely will make it again anytime soon.
Whenever I see small prawns in the wet market, prawn fritter always pops up in my mind.
Give it a try, I am sure you will enjoy snacking this fritter, as we always do.

Ingredients

  1. 100 gself-rising flour
  2. 50 grice flour
  3. 25 gall-purpose flour
  4. 1/2 tspsalt
  5. 1 pinchpepper
  6. 1 tbsp.sugar
  7. 225 mlwater
  8. 3 tbsp.hot oil
  9. 50 gbean sprout
  10. 1medium size carrot, julienned
  11. 50 gcabbage, julienned
  12. 2 stalksspring onion, cut lengthwise into 1 inch strip
  13. Enough small prawns with shell

Steps

    Mix all flour, water, salt, pepper, sugar, oil into a smooth batter. If it is a little thick, add a little bit water.

    Drizzle in hot oil, whisking at the same time.

    Place your ladle in the pot of hot oil to heat it up. Set your fire into medium once the oil is hot.

  4. 4

    Remove the heated ladle and add in about 2 tbsp. of the batter. Add in enough of vegetables, add in another tbsp. of the batter over the vegetables. Finally, place a shrimp on top and add in a little bit of the batter over the shrimp.

  5. 5

    Lower the ladle slowly into the hot oil, and let it sit in the oil. The batter will start to cook and firm up, after 30 seconds, the formed prawn fritter will separate itself from the ladle. Fry until golden brown. Repeat the process again until used up all the ingredients.
