Rabdi recipe is fully dedicated to my mom .She always used to make rabdi at home. She taught this recipe to me when I was in college. I am from Mumbai and we once went for dinner to searock hotel. There we ordered thali. Mango Rabdi was served as dessert and we all loved it.we use to make plain rabdi at home,so we found mango Radi very innovative .It is not very difficult to make rabdi.It only requires patience and the main ingredient for all the recipes...ie LOVE .#navratri special#eggless deserts #sweet tooth

Ingredients

  1. 2 litreMilk
  2. 2-3 tbspSugar
  3. 1-2Cardamom
  4. as required Few pistachio flakes
  5. few drops Kevra essence

Steps

  1. 1

    Take a broad bottom pan.pour milk and start boiling. Slow the flame otherwise milk will overflow.

    Take a big spoon and insert it in the pan.when milk boils,slow the flame.

    Alternatively change the flame form medium to high or medium to slow. After 3 to 4 boils,cream starts seperating and starts coming up.Gentle stick the malai to the Walls of the pan.

    Keep adjusting the Flame to high,for the milk to boil,and then turn on the nob to medium for flakes to stick to of the pan. Keep repeating this step again and again. Don't stir the milk instead do the push back action with the spoon or spatula.keep sticking the malai flakes.

    Keep repeating this action patiently.(sticking the flakes of cream to the pan). Do not stir the milk with the spoon.Otherwise milk will thicken but we will not get the flakey consistency.

    It will take approximately 1 hour or little more to make rabdi.when milk is redused to 1/4 quantity, scrape the milk flakes from the sides of the pan carefully. Add 2 tbsp sugar and stir gently to mix sugar.Mix very gently for 30 seconds and then switch of the gas. Add cardamom powder and just a drop of kevra essence.

    Empty the rabdi in a serving dish and chill in the refrigerator for 2 hours. Decorate with pistachio flakes and serve chilled.

    To make mango rabdi. Peel and slice mango into small cubes. For this keep the consistency of rabdi little thin.Add mango slices and chill it in the refrigerator.Serve chilled

    NOTES- Always use full cream milk.If possible use cow's milk.Rabdi made of cow's milk is very light and tasty. It is always advised to keep a pan separate exclusively for making milk dishes.But very frankly,it is not possible at home.Nothing will happen, taste remains the same but sometimes colour changes.
