Take a large mixing bowl. Sieve the gram flour into it. Add semolina, curd, sugar, salt, ginger green chilli paste, turmeric powder and lemon juice. Mix everything well. Whisk them to get a lump free batter.

Allow the batter to ferment for 2-3 hours.

Prepare the idli maker and pour sufficient water for steaming.

Grease the idli mould with some oil. Pour the batter equally over it.

Place them inside the steamer and let it cook for 15 minutes on a low to medium flame.

Put the flame off. Take the mould out and let it cool.

Separate the idli with the help of a spoon or knife. Transfer them to a plate.

Take a small pan. Heat 2-3 tbsp oil. Splutter some mustard and cumin seeds.

Add curry leaves, green chilli and saute for a while.

Add half cup of water and allow it to boil. Add sugar and squeeze some lemon juice.

Turn off the heat and pour the tampering all over the idli dhoklas.

Garnish with some coriander leaves and serve hot with green chutney.
