Ingredients

4 servings
  1. 1/2 cuplong basmati rice
  2. 1/4 cupmixed dal - green moong dal, yellow moong dal, Masoor dal, Urad dal, toordal dal
  3. 2 cupschopped spinach
  4. 1/4 cupfinely chopped onion
  5. 1/2 cupfinely chopped tomatoes
  6. 1/2 tspturmeric powder
  7. 2 tspginger garlic paste
  8. to tasteSalt
  9. 1/2 tspchilli powder
  10. 1/2 tspgaram masala
  11. For tempering:-
  12. 2 tbsp ghee
  13. 2cloves
  14. 1cardamom
  15. 1 tspcumin seeds
  16. 5-6Currey leaves
  17. 1whole dry chilli broken into pieces
  18. 1 tspgarlic finely chopped
  19. 1 tbspgreen chillies finely chopped
  20. as neededFor serving- fresh curd, papad

Steps

  1. 1

    Combine the rice and dal in enough water in a deep bowl and soak it for 30 minutes. Drain well and keep aside.

  2. 2

    Combine the spinach and 2 tbsp water in a mixer and blend till smooth. Keep aside.

  3. 3

    Combine the rice, dal, turmeric powder, salt and 1 & 1/2 cups of water in a pressure cooker, mix well and pressure cook for 3 whistles.

  4. 4

    Allow the steam to escape before opening the lid keep aside.

  5. 5

    Heat 2 tbsp of ghee in a deep non stick pan add the garlic and ginger paste and saute on a medium flame for a few seconds.

  6. 6

    Add the onions and tomatoes mix well and cook on a medium flame for 3 minutes while stirring occasionally.

  7. 7

    Add palak puree, chilli powder and garam masala mix well and cook for 3 minutes.

  8. 8

    Add the cooked dal rice mixture, salt and 11/2 cups of water mix well and cook for 2-3 minutes while stirring occasionally keep aside.

  9. 9

    Heat remaining 1 tbsp ghee in a small pan add the all tempering ingredients and saute for 1 minute on a medium flame.

    Pour the tempering over the prepared palak khichdi and mix well.

    Serve hot with curds and papad.
