Ingredients

  1. A. Starter (Levain)
  2. 100 gsourdough starter (taken from the fridge)
  3. 1 tablespoonbread flour
  4. 1 tablespoonwarm water
  5. 250 gwhole wheat flour (I used bread flour)
  6. 3/4 cupwater
  7. B. Bread
  8. 250 gwhole wheat flour
  9. 150 grye flour
  10. 150 gbread flour
  11. 2/3 cupwater
  12. 2/3 cupmilk
  13. 1/4 cupcoconut oil (olive oil or vegetable oil is fine)
  14. 1egg
  15. 50 gmixed grain flour
  16. 100 gmixed nuts (walnuts, cashews, pumpkin seeds, sunflower seeds, chia seeds, flaxseeds... whatever you have)
  17. C. Other
  18. Bread pan + loaf pan greased with butter
  19. 2 tablespoonsmilk for brushing the bread

  1. 1

    Activate the starter by mixing the sourdough starter with 1 tablespoon of bread flour and 1 tablespoon of warm water. Let it rise and become active for about 3 hours. Initially, the starter will be very still with few air bubbles. After 3 hours, it should rise about 1 cm with many bubbles. Occasionally, you might see it 'breathing', which is a good sign. (*)

    At this point, pour water into a bowl, add the starter (*), and if it floats, the bread will rise well. Mix this starter with 250 g of whole wheat flour (or bread flour) and let it double in size. (It took me 2.5 hours).

    Mix all the ingredients from section B, except the nuts, with the doubled levain in a mixer until the ingredients are well combined, smooth, and elastic, then add the nuts and mix well.

    Cover the mixing bowl with a kitchen towel and let the dough rise for 1 hour.

    Divide the dough, roll it out, and place it in a bread pan or loaf pan. Cover with plastic wrap and let the dough rise until nearly full in the pan. It took me 3 hours.

    Preheat the oven to 480°F. Brush milk on the surface of the bread. Bake for the first 15 minutes, then reduce the temperature to 355°F and bake until the bread is done.

    Cool the bread and slice it!

Mình may mắn sinh ra ở Hải Phòng - nơi có nhiều món ăn rất ngon như bánh đa cua, bánh giò, bánh mỳ Patê, chè bệt, bánh bèo, bánh gối, sủi dìn, nem cua bể...Nấu ăn vốn ko phải sở trường của mình! Từ khi chuyển vào Nam- ko có những món ăn của Hải Phòng nên mình phải tự mày mò, học hỏi. Nấu nhiều thành quen, đâm ra yêu thích nấu ăn từ đây! Sở thích từ xưa của mình là thích bánh ngọt Pháp nhất là ăn ở hiệu bánh Môka - Ngày xưa ở Hoàng Văn Thụ giờ chuyển về Cát Dài! Mình thích mùi thơm của bánh toả ra khắp nhà thật thơm và ấm cúng! Thích cùng con trai nặn bánh, rán nem! Những khoảnh khắc đó sẽ lưu giữ lại trong ký ức của chúng về bếp ăn gia đình- thật thân thương. Lớn lên hơn nữa, khi xa nhà chúng sẽ nhớ mùi thơm của bơ, vani... Ngày mỗi ngày sẽ có những món mới ra đời giống như cuộc sống có nhiều màu sắc! Cám ơn các bạn đã ghé bếp mình và chúc cho bếp các bạn luôn đỏ lửa, nồng ấm và hạnh phúc bên gia đình yêu thương.
