Ingredients

  1. 6 tbspunsalted butter, melted
  2. 1 cuppacked light brown sugar
  3. 1/2 cupcashew butter
  4. 1 largeegg
  5. 1 tspvanilla extract
  6. 1 cupall-purpose flour
  7. 1 dash1/8 teaspoon baking soda
  8. 1/4 tspbaking powder
  9. 1 dash1/8 teaspoon salt
  10. 1/2 cupsemi sweet chocolate chips

    Preheat oven to 350. Spray a 8 or 9 inch square baking pan with cooking spray. Line pan with aluminum foil with ends extending over sides for easy removal from pan. Spray foil lightly with non stick spray.

    In a bowl whisk flour,baking soda, baking powder and salt, set aside.

    In another large bowl combine melted butter and sugar beat until well combined, add cashew butter,beat until smooth, beat in egg and vanilla. Add flour mixture and mix in just until well combined, add chocolate chips.

    Spread batter evenly into prepared pan, smooth top.I used a small off set spatula to smooth batter in a even layer.

    Bake about 20 minutes until set and light golden brown, a toothpick will come out clean. Cool in pan on wire rack. When cool lift out using foil and cut into bars, Makes 12 to 14 bars.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
