Ingredients

  1. 2 cupsbrown basmati rice cooked
  2. 2shredded carrots
  3. 2sliced celery sticks
  4. 1/2chopped onion
  5. Chopped small red or any bell pepper
  6. Cupor two spinach
  7. Some chopped cilantro
  8. 1/2 cupolive oil
  9. 2 tablespoonsDijon mustard
  10. 3 tablespoonshoney
  11. 2 teaspoonslemon juice
  12. Black pepper

Steps

  1. 1

    Cook brown basmati rice Add veggies Toss with honey Dijon, lemon juice, olive oil mix

  2. 2

    (You may cook brown Basmati rice in rice cooker).

  3. 3

    If Vegan, you may pair with Tempeh or Tofu. Or add cashews chopped.

  4. 4

    Enjoy with chicken or fish!
