Ingredients

  • 2 cupsbrown basmati rice cooked
  • 2shredded carrots
  • 2sliced celery sticks
  • 1/2chopped onion
  • Chopped small red or any bell pepper
  • Cupor two spinach
  • Some chopped cilantro
  • 1/2 cupolive oil
  • 2 tablespoonsDijon mustard
  • 3 tablespoonshoney
  • 2 teaspoonslemon juice
  • Black pepper

Steps

    Cook brown basmati rice Add veggies Toss with honey Dijon, lemon juice, olive oil mix

  2. 2

    (You may cook brown Basmati rice in rice cooker).

  3. 3

    If Vegan, you may pair with Tempeh or Tofu. Or add cashews chopped.

  4. 4

    Enjoy with chicken or fish!
