Use and electrical mixer. In the mixer bowl put the whole egg, the mustard, 2 tablespoons of olive oil and a pinch of salt. Mix on low speed to blend well.

Pour in the remaining olive oil while beating until the mixture absorbs the olive oil and it gets firm and fluffy.

Finally add in the lemon juice and combine well. This will make the mayonnaise slightly thinner.

Serve immediately or store in the fridge and consume in the next couple of days.
