  1. 500 gsweet potatoes, peeled and halved lenghtways
  2. 5/8 cupflour, self raising
  3. 2 eggs, lightly beaten
  4. 5/8 cupbuttermilk
  5. 1 1/2 cupcorn kernels, canned and drained
  6. 5/16 cupbunch of coriander, roughly chopped
  7. olive oil
  8. 5/16 yogurt, to serve

    In a saucepan boil the sweet potato until half done (they should be soft but not completely done). Remove from saucepan, let cool for 10 minutes and coarsely grate the potatoes.

    In a bowl, beat together the eggs and the buttermilk; add the flour and mix until well blended.

  3. 3

    Add corn and coriander, flavor with salt and pepper then add in the grated sweet potato. Mix well.

    To make the fritters, heat olive oil in a non-stick pan over moderate flame. Once oil is hot, use 2 tablespoon of potatoes mixture for every fritter to be made, place the mixture (2 tablespoon) into the pan and spread to make a circle. Fry until light brown and firm (about 2 minutes on each side). Repeat for the entire mixture.

    Remove from heat; serve each fritter topped with a tablespoon of yoghurt.

I’m Nour, my friends call me Noura. i live in Dubai and I have 2 beautiful children: Ahmad, 9 yrs old and Manal, 7 yrs old.We travel a lot and we love to try the food of the country when we are abroad. This isn’t easy with the kids since they always want to go to mcdonalds!!!However last summer we went to Lebanon for a vacation and since then my children love eating Lebanese food, they keep on asking for a manouche and kafta sandwich…I have no problem cooking all kinds of cuisine. I enjoy inviting my girlfriends for lunch and let them discover my cooking. My sister told me about this website, and I am very happy to be a member and learn more recipes.
