Yummy and easy Kabab Koobede
An Iranian recipe for meat kabak fingers, grilled with tomatoes on skewers. Served with cooked rice.

Place the meat, egg, onion, garlic, salt and pepper in a bowl and knead with your hands until all ingredients are well combined. Refrigerate the mix for at least 2 hours or preferably over night.

To do the Kabab:

Take a piece of the meat mix with your hand and form into a ball and slide a skewer inside it. Press firmly to spread the meat along the skewer, in order to form a kabab. Repeat until all the meat mix is on skewers.

Slide the tomatoes onto a skewer.

Heat up the grill, and place the meat skewer and tomato skewer on it. Flip to cook on both sides according to taste.

When done, slide the meat off the skewers maintaining the shape. Place on a platter and serve with rice or bread.
