  1. 1 large eggplant, cut into medium-sized pieces
  2. 1 large potato, peeled and cut into medium-sized pieces
  3. 1/2 squash, cut into medium-sized pieces
  4. 1/2 cupgreen beans, strings removed and cut
  5. 1 tomato, chopped
  6. 3/4 cupvegetable oil
  7. 1 cuponions, chopped
  8. 1 clovegarlic
  9. 1 green chili pepper
  10. 1 tablespoonbaharat spice
  11. 3 tablespoonstomato paste
  12. 2 dried black limes, pierced, loomi
  13. 1/4 cupbunch of coriander, chopped
  14. 1 teaspoonlime juice
  15. salt
  16. Spice Mix
  17. 1 teaspooncinnamon
  18. 4 whole black peppers, crushed
  19. 1 teaspoonclove, ground
  20. 1 teaspoonground cardamom
  21. 1/4 teaspoonturmeric
  22. 1/4 teaspoonbaharat spice
  23. 1/2 teaspoondried coriander
  24. 1/2 teaspooncumin

Steps

    Crush the garlic clove with salt, chili green pepper and baharat, and leave aside.

  2. 2

    Heat oil in a medium saucepan, add in onions, crushed garlic mix, and the spice mix. Cook until onions get tender.

  3. 3

    Add in potatos, eggplants, squash, and green beans. Stir until they are well coated with the spices.

  4. 4

    Add the tomato, stir, and simmer covered for 5 minutes.

  5. 5

    Dissolve the tomato paste in water. Pour it over the saucepan along with the dried black lime. Leave to boil uncovered for 5 minutes, then lower the heat and cook for another 10 minutes.

    Add in the coriander, lemon juice and salt. Simmer till the sauce begins to thicken.

  7. 7

    Serve warm with rice or grilled chicken

This was good but uses a lot of spice not that it was too spicy just too much spices. We had it with white Basmati rice. I made this with butternut squash (best part), no green beans as I didn't have any on hand, good quality canned tomato, canola oil to be soy free, no green chili pepper out of preference for less spicy taste, sea salt, plus the rest of the ingredients. I liked this better than another recipe i have made for a similar dish.
