Steps

75 mins
  1. 1

In a pan, roast the almonds and pine nuts until brown, then remove from pan and set aside.

  2. 2

Sprinkle the inside and outside of the fish with the black pepper and some salt. Wrap in aluminum foil and bake in the oven until tender.

  3. 3

Remove the fish from the oven, peel the skin off, and remove the bones and head. Discard the bones and keep the head. Cut the fish flesh into serving-size pieces and set aside.

  4. 4

Fry the onions in 4 tablespoons of vegetable oil until crispy and brown in color. Remove 4 tablespoons of browned onions and keep them aside for the garnish.

  5. 5

Add the fish head, the spices, and 5 cups of hot water to the onions in the pan. Cook on medium heat, with the lid on, for 30 minutes until the onions become very soft.

  6. 6

Then, remove the fish heads and add the lemon juice. Heat until the mixture boils.

  7. 7

Add in the rice, cover the pan, and cook over low heat for 25 minutes. Add more hot water if needed and taste to see if more salt and seasoning is needed.

  8. 8

Transfer the rice to a serving platter. Place the fish pieces on top and sprinkle with the reserved browned onions and the browned pine nuts and almonds.

  9. 9

    Serve hot.

I love food and have always enjoyed eating food from all kinds of cuisines!Becoming a professional dietitian has helped me enjoy delicious foods while maintaining good health and weight because it has taught me how to cook recipes in lighter healthier ways. Therefore, I can eat all kinds of dishes without feeling guilty about it!This is what i try to practice at home also for my family. I always cook and try new light recipes as my time allows. However, when eating out, i will not hide that we eat whatever we please :) And this is completely fine as long as a healthy overall balance of food intake is maintained. This is the nutritional knowledge that I love to provide and teach to all of you on Shahiya.com because it brings me great satisfaction to see people become healthier and lose weight while enjoying their life and eating what they desire.I will also try my best to provide you with diet recipes that are varied enough to help you enjoy all kinds of food without any compromise on your weight and health! For more information on my professional track, please check my personal page: http://www.shahiya.com/english/profile.aspx Favorite things to cook: Italian food like pastas and pizzas, more recipes of which are to come on shahiya.com so stay posted ;)
