Ingredients

  1. 500 gWhite fish (such as cod or hamour)
  2. 170 gbasmati rice, wash according to instruction
  3. 450 mlwater
  4. 1onion, thinly sliced
  5. 100 gSoft butter
  6. 80 gtoasted mixed nuts (pine nuts, almond or cashew nuts)
  7. 1/2 tspturmeric powder
  8. 1/2 tspcumin powder
  9. pinchcinnamon
  10. salt and pepper, to taste
  11. coriander for garnish (optional)
  12. sliced lemon (optional)

    In a pan, toast the nuts in a tablespoon of butter until browned. Remove, and set aside.

    Rub the fish in salt and pepper. Add the remaining butter into the pan and fry the fish until tender. Then set aside.

    Fry the onion in the used butter (add more if needed), until crispy and brown in color. Toast sliced lemon on the same pan. Set aside some of the fried onions and lemon to use for garnish.

    Add the spices and 450ml of water to the remaining onions in the pan, then cover and let it simmer for 30mins until the onions become very soft. (You can skip this step if you are in a hurry. Just add washed rice, spices and water to the remaining onions. Cook the rice over low heat for 15 mins.)

    In a separate pot, add the rice and a tablespoon of butter, then add 350ml of the spices sauce over the rice, and transfer all the soft onions. Cook the rice over low heat for 15 mins.

    Put the rice in a serving plate, place fried fish over it and sprinkle with the reserved fried onions and toasted nuts. Garnish with some coriander and serve! :)
