‘Tamago’ Don

‘Tamago’ is egg in Japanese. This dish is the chicken-less version of ‘Oyako’ Don. You only need 2 Eggs, 1/4 Onion and cooked rice. It can be prepared so quickly and cheaply, and still quite filling and nutritious. You can add some other vegetables or Asian mushrooms.

Place Water, Dashi Powder, Soy Sauce and Mirin in a small frying pan (18-20cm), add sliced Onion and bring to the boil over medium heat. Cook until Onion is soft, pour lightly whisked Eggs over but DO NOT stir. Cover with a lid until the egg is cooked as you like it.

Half fill a bowl with warm Cooked Rice and cover it with the egg mixture. Sprinkle with chopped Spring Onions and enjoy.
