If you realize you're running late to make lunch or dinner, this is a quick, light, and delicious recipe. You can use any type of vegetables—the process is the same once the vegetables are cooked.

Wash and clean the Swiss chard, removing most of the thick white stems, but leave about 2 inches (6 cm). Place them in a pot with plenty of salted water and bring to a boil. Boil for about 15 minutes.

Meanwhile, in a large bowl, beat the eggs well. Add salt, pepper, turmeric, and Parmesan cheese, and continue mixing everything together.

Preheat the oven to 350°F (180°C). Line a baking pan with parchment paper.

When the Swiss chard is cooked, drain it, roughly chop it, and add it to the beaten eggs. Mix everything together and pour into the prepared pan. Bake the frittata at 350°F (180°C) for 20 minutes, until it turns golden brown.
