Apricot & Oats Balls

I made Apricot Sauce’ on the other day and there was some leftover in the fridge. I decided to make these delightful & gluten-free ‘Apricot & Oats Balls’. Simply mix same amount of Apricot Sauce and Instant Oats (or ground Rolled Oats) and heat in the microwave. I added Desiccated Coconut and chopped Dry Apricots as well. Making these balls can be a fun activity for children.

Ingredients

12 Balls
  • 1/2 cup‘Apricot Sauce’ *Find my recipe at https://cookpad.wasmer.app/uk/recipes/8157114-apricot-sauce
  • 1/2Instant Oats *OR Rolled Oats
  • 1/4-1/2 cupand extra Desiccated Coconut
  • 6-8Dry Apricots *cut into small cubes

Steps

    Place Apricot Sauce and Instant Oats in a heat-proof bowl, heat in the microwave at full power for 1 minutes. *Note: If you use Rolled Oats, grind or process into fine crumbs as Rolled Oats takes longer time to cook.

    Note: Some people enjoy eating raw Oats. You can simply mix them, but you might need more Oats if you don’t heat.

    Add Desiccated Coconut and chopped Dry Apricots, and combine evenly. If the mixture is too soft to roll, you need more dry ingredients.

  4. 4

    Place 2-3 tablespoons Desiccated Coconut on a plate. Roll a heaped teaspoon of mixture into balls and roll in coconut to coat.
