Roast the brinjals till they are mushy and start leaving their own oil.

Let cool the brinjals separately.

Meanwhile cut onion and spring onion. Mash some garlic.

Add oil in kadai. Add mustard seeds to crackle. Add garlic, onion and spring onion one by one. Add salt, turmeric powder, hing, red chilli powder and garam masala powder into it.

Remove the cover of the brinjals and mash them properly. Add it into the kadai.

Cover and let it cook for 2-3 minutes.

Garnish with chopped spring onion. Vanga bharit is ready. It is best served with bhakri or chapati.
