Beetroot Croquettes

Wash the beetroots and the potatoes nicely. Steam them in a steamer or a rice cooker. Allow to cool.

When the potatoes are still warm, remove the skin and mash it well using a potato masher. Make sure there are no lumps.

When the beetroots cool, remove the skin and either grate it or chop it finely.

In a large mixing bowl, add the mashed potatoes, grated or chopped beetroots, grated cheese, onions, green chillies, garlic, oats, pepper powder and salt. Mix well. Form into cutlet shape. Keep in refrigerator for one hour.

Heat oil in a frying pan and shallow fry the croquettes on medium flame on both sides till done. Serve warm.
