Ingredients

  1. For the batter
  2. All-purpose flour
  3. Sparkling water
  4. Salt
  5. For the fritters
  6. Zucchini
  7. Zucchini blossoms
  8. Marjoram
  9. Sage
  10. Baking soda

Steps

  1. 1

    To make the batter, mix the sparkling water and flour with a pinch of salt in a bowl. Cover with plastic wrap and refrigerate for at least 30 minutes.

  2. 2

    Once chilled, add the finely chopped marjoram and sage, grated zucchini, and roughly chopped zucchini blossoms to the batter.

  3. 3

    Add 1/2 teaspoon of baking soda to the mixture.

    Heat vegetable oil in a small saucepan and start frying the fritters.
