To make the batter, mix the sparkling water and flour with a pinch of salt in a bowl. Cover with plastic wrap and refrigerate for at least 30 minutes.

Once chilled, add the finely chopped marjoram and sage, grated zucchini, and roughly chopped zucchini blossoms to the batter.
