Vangi Bath / Brinjal Rice

Cook the rice and keep aside

To make the vangi bath powder, first dry roast the coriander seeds and set it aside to cool.

Heat a little oil in a pan and roast urad dal,chana dal,red chillies,cinnamon, clove, cardamom,star anise and fennel seeds until light brown.

Add grated coconut and roast it until golden brown. Cool it and powder it together with the roasted coriander seeds.

Heat oil in a wok and add cinnamon, clove,cardamom,fennel seeds, cumin seeds,bay leaves and red chilies and saute for a minute.

Add green chilies and onions. Fry till the onions turn translucent and add salt.

Add brinjal and saute it for 2-3 minutes. Cover and cook until the brinjal is done.

Add the vangi bath powder and mix it thoroughly and cook for a couple of minutes. Add water if needed.

Add rice and lemon juice to the well cooked masala. Mix it well.

Adjust the salt [ if needed] and serve.

Vangi bath goes well with Raita /Plain curd, Pappad and Pickle
