Soft and Fluffy Gua Bao Buns

I've always loved the aroma of dough and enjoy experimenting with different dough ratios to create a variety of delicious snacks. Since my family loves gua bao, I wanted to make the buns from scratch—rolling out the dough, steaming the buns, braising pork belly, grinding peanut powder, and buying pickled mustard greens and cilantro. Living overseas means I have to do everything myself, but seeing my family so satisfied makes it all worthwhile.

Combine all the ingredients to form a dough. Mix and knead until smooth and elastic. Let the dough rise for 1 hour.

Divide the risen dough into 6 equal pieces and shape each into a ball. Roll each ball into an oval shape, brush with a little lard, then fold the dough in half. Let the buns rise for another 30-40 minutes.

Bring water to a boil in a steamer. Steam the buns over medium-low heat for 12-13 minutes.
