Ingredients

16 servings
  • 15-20Jalapeño peppers (the bigger the better)
  • 4 rasherssmoked back bacon
  • 1 tspmedium olive oil
  • 2 cupsmature cheddar cheese
  • 1 cupplain flour
  • 1 tspbaking powder
  • 1/2 tspsalt
  • 1/2 cupmilk
  • 1/2 cupwater

Steps

  1. 1

    Carefully slice the peppers lengthways along one edge & remove the seeds & placenta.

    Chop the bacon into 5mm squares & fry in olive oil.

  3. 3

    In a bowl, mash the cheese, bacon, seeds & placenta together until well mixed & has formed a paste.

    Stuff the peppers with the cheesy bacon paste.

  5. 5

    Mix flour, baking powder and salt together.

    Add milk and water slowly, then beat until batter is smooth.

  7. 7

    Dip the stuffed peppers into batter, allow excess to drip off.

  8. 8

    Deep fry until golden brown.
