This seafood dish is super easy to make and quick.

I recently made a roast chicken where I used whole cloves of garlic, unpeeled. Rather than throwing away the garlic cloves I peeled them and froze them to use in dishes such as this one. Roasted garlic adds great flavours to dishes.

Ingredients

2 servings
  • 1 canchopped tomatoes
  • 4fresh red chilli's, chopped
  • 1onion, chopped
  • 50 mlwhite wine
  • Hand full of fresh parsley, chopped
  • 6Roasted garlic cloves, chopped
  • 300 gmixed seafood
  • 4 tbspolive oil
  • to tastesalt

Steps

    In a saucepan, heat the olive oil.

  2. 2

    Once the oil is heated. Reduce the heat to medium to low and add the garlic, parsley, onion and chili's. Fry for about 3-5 minutes or until the onions have softened.

    Add the tomatoes, salt to taste, wine and simmer for about 5-8 min until most of the liquid has cooked down.

  4. 4

    Add the seafood into the pan and cook. I did use already cooked seafood which literally just needed warming up but you can use raw seafood which will take no more than 5 minutes to cook as well.

    Serve with warm crusty bread and enjoy.
