Sweet Potato Yokan (Imo-yokan)

This is sugarless recipe but you can add some if you like. In my opinion, sweet potatoes are sweet enough!

Ingredients

  1. 300 gsweet potatoes (unpeeled)
  2. 2 gagar powder
  3. 80 mlwater

Cooking Instructions

    Peel the sweet potatoes, cut in pieces and boil until soft.

    Mush or push through a tamis (recommended) while the potatoes are hot.

  3. 3

    Melt the agar powder in the water. Boil for about 2 minutes (stir time to time).

  4. 4

    Mix the agar water and the potato paste together.

  5. 5

    Put the dough in a mold (rectangle or square) and smooth the surface. Leave until it gets firm. You can also put it in a fridge but not obligatory.
