Wash aaloo bukhara twice with tap water and add 2 cups of water and soak it for almost 1 night. Now take a wok and add aaloo bukhara along with water add 1 cup of more water to it place it on medium flame now add sugar, cardamom, chili, salt and melon seeds give a good mix to it and then add vinegar and a pinch of red color (if you want, it's optional) once sauce getting thick turn out the flame and let it keep a side until it's getting cool. Now take a glass jar and place sauce in it.

You can use this sauce for almost 3_4 weeks. Make your iftar more tempting..
