So we know exactly what we're eating... delicious homemade gyro pita.

Place the pork belly slices and all the spices in a bowl. Mix well and refrigerate for at least 2 hours to marinate the meat.

Arrange the pork belly slices on a baking sheet and bake in a moderate oven until cooked through. Once done, let them cool slightly, then finely chop the meat, removing any bones. Place the chopped meat back in the oven under the broiler for a few minutes to crisp up.

Meanwhile, prepare the French fries and keep them warm. When the meat is crispy, place the pita breads on top to warm them slightly.

To assemble, spread yogurt or tzatziki on each pita, then add tomato slices and onion. Top with the meat and finish with the fries.
