I find freezing and allowing carrot and red pepper to soften in the fridge gives it the desired soft leathery feel. This makes it very easy to fry.

Get a pan ready for boiling the gnocchi in some salted water. Thinly slice the carrot, onion, and garlic. Add them to a frying pan of olive oil on medium heat.

As the veg is softening add chopped florretes of broccoli, peas and chorizo. Add chilli sauce.

5 mins later add butter, almond milk, and smoked paprika allow it to cook through and mix

Add gnocchi to boiling water and wait till it floats should be about 2 mins

Drain off gnocchi and add to frying pan and allow it to mix in the heat for a minute

Serve with generous amount of parmesan and test for seasoning also goes well with garlic bread
