  1. 2eggs
  2. 1tomato, medium size, chopped as wedges
  3. 1/2 cupmushrooms, button or oyster
  4. oil
  5. salt
  6. 1 tbspsugar
  7. chopped spring onions

Steps

  1. 1

    Whisk eggs in a bowl, and cook them in a pan with oil. Take them out and place in a plate. I cooked for 2 people. U can fully cook or half cook the eggs as u desire.

    In the same pan, add oil, fry green onions, mushrooms for 2 to 3 mins. Add tomato wedges, salt as desired and sugar. Cook for 5 to 7 mins

    Add eggs to pan and cook for another 2 minutes. U can add any other seasoning ; oregano or red chilli flakes or even sriracha.

    Transfer to a bowl or plate and enjoy the most important meal of the day.. Breakfast served!!!😁
