Ingredients

  • 1/2 cupapricot preserves
  • 1 tablespoonDijon mustard
  • 1 tablespoonrice wine vinegar
  • 1/2 teaspoonground ginger
  • 1 cloveminced garlic
  • 1-1/2 poundpork loin

    Heat oven to 375.

  2. 2

    In medium bowl, whisk all ingredients together, except pork.

  3. 3

    Place pork in bowl, roll in sauce and refrigerate 10 minutes.

  4. 4

    Remove pork from marinade, place in roasting pan and bake 25 minutes. Remove from oven and allow to rest 10 minutes.

  5. 5

    Cut into slices and pour pan juices over pork and serve.
