Sift your Flour together with the baking powder Into a mixing bowl.

Add in the sugar and whisk

Add in the lemon rind and mix

Add in your lemon juice together with the vanilla essence and mix

Transfer it into your baking tin then tap to remove air bubbles and level

Check, using a fork. If the fork comes out clean, it's ready

Remove from oven and allow to cool

Remove from the baking tins and wrap it in a cling fling or a polythene

Remove when completely cooled, level and serve
