Ingredients

  1. 1 bunchgreen bananas
  2. 200 gmpotatoes
  3. 3 pcslarge tomatoes sliced
  4. 1large onion sliced
  5. 1carrot sliced
  6. 1 bunchcoriander diced
  7. 3 clovesgarlic diced
  8. 1 pcgreen capsicum sliced
  9. Stock
  10. Salt
  11. Oil

Steps

  1. 1

    Prepare all the ingredients

    In a saucepan, add oil and garlic till brown. Add onion and sweat it.

    Add capsicum and tomatoes and salt. Let them cook well

    Add matoke and potatoes. Pour in the stock and let them cook at low temperature to get a nice thick sauce. Add the carrots and coriander 5 minutes before removing from the heat to prevent from over cooking.

    Remove from the heat and serve. Garnish appropriately
