In a saucepan, add oil and garlic till brown. Add onion and sweat it.

Add matoke and potatoes. Pour in the stock and let them cook at low temperature to get a nice thick sauce. Add the carrots and coriander 5 minutes before removing from the heat to prevent from over cooking.

Remove from the heat and serve. Garnish appropriately
