Our cauliflower was going off and I decided to try this for the first time with a pork stew

Cook the kidney beans, drain the water and set aside

Cut the florets into pieces small enough to grate

Put into a food processor on pulse. If you don't have one like me, grate each piece.

In a large pan, add the oil and then the cauliflower and mix together until all the cauliflower is fried. Do not add water because while it fries, it releases water that will cook off anyways. Add salt to taste

Then add the kidney beans, peas and spring onion. Keep on a low heat and fold over until it's cooked. Serve when ready to eat.
