Cut and wash all the vegetables thoroughly. Heat a pan and fry the bitter melon with a little salt until golden. Fry the urad dal fritters until crisp. Except for the drumsticks, fry all the vegetables with a little turmeric and salt over medium heat until they soften. Separately, fry the drumsticks with a little salt for 2-3 minutes.

Fry the urad dal fritters and set aside. Make a paste of the white mustard seeds and set aside. Also, make a paste of the ginger.

Now, heat oil in a pan. Add bay leaves, dried red chilies, cumin seeds, and panch phoron. Let them sizzle for 1-2 minutes. Add all the vegetables (except the fried bitter melon and urad dal fritters) and mix well.

After mixing for 3-4 minutes, add the ginger paste and white mustard paste. Mix well and add about 2 cups (480 ml) of water. (Shukto uses very little turmeric, so only use the amount added during frying; do not add more later.)

Once the vegetables are well cooked, add salt to taste and 1/2 teaspoon sugar. Break the fried urad dal fritters into pieces and add them. Add the fried bitter melon and coconut milk. Let everything simmer together for 5-7 minutes. When done, sprinkle the dry roasted cumin-chili powder and, if you like, add a tablespoon of ghee. Turn off the heat.

Serve hot with rice. Enjoy this traditional Bengali dish, Shukto.
