Who says eating healthy can't be delicious? Try this pancake recipe! Perfect for a snack, breakfast, or anytime you want.

Combine all ingredients. I used a mini food processor because I diced the apple.

Preheat a skillet over low heat. When it's hot, add a little nonstick spray or a drizzle of oil so the pancakes don't stick.

Flip the pancakes after a few seconds when they are golden brown.

You can enjoy them plain—they're delicious! Or add your favorite toppings like Nutella, honey, caramel, strawberries, banana, or nuts. I topped mine with Nutella and sliced strawberries. So good! This recipe makes about 4 pancakes, each about 5 inches (13 cm) wide.
