Ingredients

  1. 2Large chicken fillet (cubed)
  2. 2 tablespoonoil
  3. salt and freshly ground pepper
  4. 1 teaspoonground garlic
  5. 2 tablespoonfreshly grated ginger
  6. 1/2 teaspoonground green chillies
  7. 1 cancoconut milk
  8. 4 cupswater
  9. 2 teaspoonchicken stock powder
  10. 3 tablespoonsoy sauce
  11. 100 gthin rice noodles
  12. 1small tray baby corn
  13. 1small tray sugar snap peas
  14. 1lime (juiced)
  15. Coriander

Steps

  1. 1

    1. In a deep pot add oil, garlic, ginger, green chillies, chicken, soy sauce, a pinch of salt and freshly ground pepper.

    2. Cook on high for 3 minutes till chicken turns white.

  3. 3

    3. Add coconut milk, water, chicken stock powder, corn & peas.

  4. 4

    4. Cook for 30 minutes on low till veg & chicken cooked through.

  5. 5

    5. Boil noodles for 3-4min. Rinse under cold water.

  6. 6

    6. Add to pot with lime juice and mix in.

  7. 7

    7. Taste to see if more salt and pepper is needed.

  8. 8

    8. Garnish with coriander.

    Note: If you have green thai curry paste on hand, I would add some to taste as well.
