This morning the weather is nice because it rained last night. I felt like eating delicious Pad Thai, reminiscent of my aunt's cooking. She makes it very well, so I called her for the recipe to try making it myself. I used whatever ingredients I could find, improvising a bit, but it turned out delicious!

She makes it very well, so I called her for the recipe to try making it myself. I used whatever ingredients I could find, improvising a bit, but it turned out delicious!

Prepare all ingredients as shown in the picture.

Soak the rice noodles in clean water until soft. In a pot, make the Pad Thai sauce by adding enough water and bringing the tamarind paste to a boil. Let it cool, then squeeze and strain to get the liquid. Set aside. Heat again and season with various condiments to taste. Set aside.

Once everything is ready, heat a pan and add lard. Sauté the shallots and garlic until fragrant and golden. Add tofu and pickled radish. When the shallots and garlic are fragrant, add the fresh shrimp and stir-fry until just cooked. Set aside. Then, add the noodles and duck egg. When the egg starts to cook, stir everything together, followed by the dried shrimp.

Season with the prepared Pad Thai sauce and stir quickly. Add the cooked shrimp, followed by the bean sprouts and garlic chives. Stir quickly to combine, then turn off the heat. Serve with fresh vegetables like green onions, cilantro, lime wedges, chili powder, ground peanuts, and sugar. Enjoy your meal!
