I love to cook! I get creative in the kitchen all the time combining both my Spanish and Louisiana roots. I also cook the old recipes that were passed down from mother to daughter going from one generation to the next. I hope you enjoy my chicken breast tacos. The great thing about the way the chicken is prepared here is that you can add the chicken to create another dish of your own. Please add more salt, minced serono pepper, Tony's, Louisiana hot sauce, extra cumin, or whatever you like. My family loves this dish!

Easy chicken tacos

Ingredients

  1. 3 lbschicken breast
  2. 1/2large yellow onion
  3. 1/2 cupchopped cilantro
  4. 1/2 cupdiced sweet peppers or bell peppers
  5. 2 clovesgarlic
  6. 1 tspsalt
  7. 2 tspblack pepper
  8. 1 tspcrushed chili pepper flakes
  9. 2 cupschopped lettuce
  10. 1 cupchopped purple onion
  11. 1/2 cupcilantro
  12. 2limes
  13. 1& 1/2 cup shredded cheese
  14. Flour or corn tortillas
  15. 2 tablespoonsolive oil
  16. 1/3 cuplight chili powder
  17. 1-2 tablespoonspaprika

Cooking Instructions

    Cut thawed chicken breast against the grain, then chop into small bite sized pieces. Dice purple and yellow onion. Dice sweet peppers. Cut up cilantro. What you see below is what I set aside for toppings.

    In your favorite nonstick 12 inch pan, add 2 tablespoons of olive oil. Add chopped up chicken, yellow onion, 1/2 of the cilantro, salt, black pepper, chili flakes, 2 tablespoons cumin, 1/4 cup light chili powder, garlic, 1 tablespoon of paprika.

    On medium heat cook all ingredients in step 2 until it looks like the picture below

    Make your tacos however you like them!

    Chop about 2 cups of iceburg lettuce. Squeeze 1 lime and sprinkle with salt. This adds zest to your lettuce!
