Meatball Tortellini Stew

Ingredients

  1. 1 lbextra lean ground beef
  2. 1/2 cupdry bread crumbs
  3. 1egg
  4. 1 tspsalt
  5. 1/4 tsppepper
  6. 1/4 tspparsley
  7. 2 tbspoil
  8. 1onion chopped
  9. 4 cupsbeef broth. I added an extra cup of water
  10. 1 can (16 oz)diced tomatoes
  11. 1 can (16 oz)kidney beans
  12. 1/2 tspdried oregano leaves
  13. 1/2 tspdried basil leaves
  14. 1 cupfinely diced carrots
  15. 1 cupfinely diced celery
  16. 1 pkg (9 oz)tortellini with cheese filling

Cooking Instructions

    Combine the beef, bread crumbs, egg, salt, pepper and parsley. Shape into 1 inch meatballs.

    Heat oil in soup pot. Add meatballs. Brown on all sides, rolling them around. Remove and reserve

  3. 3

    Add onion to pot. Cook. Stirring until soft. Stir in need broth, tomatoes with liquid, oregano, basil, carrots and celery.

    Cover. Bring to a boil. Then simmer about 15 minutes or until vegetables are about done.

    Add the kidney beans and the tortellini. Cook for about 6 minutes

    Return meatballs to the stew. Simmer for 10 minutes.

    Serve hot with Parmesan cheese to put on top

    You can put frozen chopped spinach in with the beef for the meatballs. Make sure it's thawed and we'll drained.

I think I want to make this. But because I am the queen of shortcuts… I will probably use frozen meatballs and just cook them in the oven.
