Ingredients

  1. 1 cupuncooked long grain white rice
  2. 14 ozchicken broth
  3. 1 cupsour cream
  4. 4 ozcan diced green chile peppers
  5. 2 cupshredded pepper Jack cheese, divided
  6. 1 1/2 cupfrozen corn
  7. 1/4 cupfinely chopped fresh cilantro
  8. 1salt & pepper

Steps

  1. 1

    In a large pot, bring the rice and chicken broth to a boil. Reduce heat to low, cover, and simmer 20 minutes.

  2. 2

    Preheat oven to 350. Lightly grease a 1-1/2 quart casserole dish.

  3. 3

    In the pot with the cooked rice, mix the sour cream, green chile peppers, 1 cup pepper Jack cheese, corn, and cilantro. Season with salt and pepper.

  4. 4

    Transfer to the prepared casserole dish, and top with remaining cheese.

  5. 5

    Bake uncovered 30 minutes in the preheated oven, until cheese is bubbly and lightly browned.
