In a sauce pan, heat oil then add onions, garlic, ginger and sautè for about two minutes.

Then add the curry, cumin, coriander, chilli. Saute until fragrant.

Pour the stock and coconut milk. Let it simmer on my medium-low heat for about 10 minutes to thicken. Make sure the heat isnt too much as it can make the milk to cuddle.

Add the Apples and tofu, let it simmer for another ten minutes to cook through.

And TADA. You are done. Serve with rice or anything you want. Served mine with basmati long grain rice.
