Prepare 2 15cm pans by spraying with spray and cook. Preheat oven to 180 degree Celsius

Mix cocoa powder with warm milk until all lumps have dissolved. Add in coffee and set aside to cool

Sift flour, baking powder and salt in a bowl

Separate eggs. Keep yolks in a medium sized bowl. Keep egg whites in a small bowl and whip till soft peaks. Then beat yolks, gradually adding sugar. Beat until light and creamy

Add cocoa mixture, oil and vanilla to the egg yolk mixture and mix using a metal spoon

Add sifted flour mixture to this and mix gently

Finally, fold in egg whites gently

Add batter into prepared tins and bake for 40-45 minutes or until a skewer comes out clean.
