Preheat oven at 180*c

In a bowl, mix well eggs, buttermilk, vinegar, oil (I always use olive oil) and vanilla extract.

In another bowl, sift flour, baking powder, salt, caster sugar and cocoa powder. Add the egg mixture and food colouring and mix well till combined.

Spoon in the batter into a greased muffin pan till they are 3/4 full, OR, Pour the batter into a greased spring form cake tin. Bake for 25-30 minutes (or until a skewer comes out clean). And then cool on a cooling rack.

Now, time for the frosting. When completely cool. In a clean mixer bowl. Beat the cream cheese till smooth, then add the butter and vanilla extract. Beat at medium speed till fluffy. Then add the icing sugar and beat until combined (be careful not to overbeat). Spread the frosting evenly. Put in the fridge till the frosting is set and enjoy.
