Ingredients

  1. 2eggs
  2. 1 3/4 cupssugar
  3. 2 teaspoonscinnamon
  4. 1/2vegetable oil
  5. 6medium apples, I prefer Granny Smith
  6. 2 cupsall purpose flour
  7. 2 teaspoonsbaking soda

  1. 1

    Preheat oven to 350. Grease a 9 x 13 pan. Set aside

  2. 2

    Mix eggs, sugar, cinnamon and oil until well blended.

  3. 3

    Peel, core, and chop apples.

  4. 4

    Add to egg mixture. Stir until well coated.

  5. 5

    Mix flour and baking soda.

  6. 6

    Add to Apple mixture. Mix well until flour is absorbed.

  7. 7

    Pour into prepared pan. Smooth down and bake for 55 minutes.

Nice! Very similar to my pear cake, which was originally an apple cake.
