Preheat your oven to 350°F (180°C).

Mix the oil or melted butter with the sugar, sweetener, or honey and the pinch of salt. Then add the egg.

Add the flavoring, spice, or zest you chose, along with the rolled oats.

Add the oat flour. If you use honey, you may need more flour because of the extra liquid. If your dough is too dry, add milk.

Let the dough rest for 10-15 minutes. After resting, it will be less sticky. Grease a baking sheet with butter or oil. Take a bit of dough, form into balls, flatten them, and place on the baking sheet. I prefer this method because it's hard to roll out the dough.

Bake for 10-15 minutes. Baking time may vary depending on your oven. The cookies should be golden on the bottom and the oats well cooked. Let them cool.
